Starter Bundle for Ethiopian Cooking

Selam Tesfaye runs sourcing and packing for the starter bundle line. She grew up between Gondar and Addis, learned to cook doro wat from her grandmother, and spent six years working with cooperative mills before joining Ethio Spices. Her job is the unglamorous part: checking that the berbere in each box matches the batch note, that the korarima pods are whole and not cracked, and that the recipe cards actually line up with the grind inside the pouch.

She is the person who decides whether a batch of shiro powder is fine enough for a first-time cook, and she writes the harvest and drying notes that ship with every bundle. If you are new to Ethiopian cooking and unsure how much mitmita to start with, she is the one who answers that email.
