Clarifications for Managers and Wholesale Buyers

If you are placing orders on behalf of a restaurant, deli counter or staff kitchen, a few points about how we work are worth stating plainly before you commit to a standing order. These are the definitions we use when we talk about batches, grind, and what a manager can expect to receive.

What "batch" means here

A batch is one milling run from a single grower group, not a calendar month. Two berbere batches can carry the same harvest month and still differ in colour and heat, because drying conditions on raised mats vary between Gondar plots. Batch notes on the pouch tell you which run you received.

Grind is set per order

We grind to order. If your kitchen wants mitmita finer for kitfo than the standard mill setting, say so when you send the order and we will adjust the run. Once a pouch is milled and sealed, the grind cannot be changed, so the coarseness note on the label is the final word.

Pouch sizes are fixed

Berbere, mitmita, shiro powder, korarima, besobela, tikur azmud and koseret ship in resealable 100g, 250g and 500g pouches. We do not split a 500g pouch into smaller units for a mixed basket, and the starter bundle is packed as a set rather than assembled from loose stock.

Heat level is a choice, not a guarantee

When you pick a heat level at checkout, we blend toward it using the chilies available in the current run. Bird's eye crops shift from season to season, so a "hot" mitmita in one order may read slightly milder in the next. Tell us if a kitchen needs consistency above all else.

Recipe cards and gift sets

Recipe cards for doro wat, misir wot and kitfo travel with most orders. Gift sets are packed for retail display and include the same batch notes as standard pouches. If you need cards in a specific quantity for a counter, mention it in the order notes rather than assuming they are counted per pouch.

Repeat orders and mixed baskets

The cart handles mixed blends, gift sets and repeat orders in one basket. A repeat order is filled from the current batch, not held back from an earlier run, so expect the batch note to change between deliveries. Questions about a specific delivery can go to info@ethiospices.com or +27(24)2599624.

Buyers running kitchens, delis and staff canteens tend to settle on a short list: a red blend that holds up in large pots, a fine heat spice for finishing, and a bundle that gets new cooks started without guesswork. These are the three that move fastest through wholesale baskets.

Sun-dried chilies, korarima and besobela from Gondar growers.

The workhorse for doro wat and misir wot at volume. Medium grind blooms fast in niter kibbeh, and the 500g pouch keeps a busy line stocked through a full service week.
